Sunny and Ross Lusted spent many years working for acclaimed Aman Resorts Group. When they decided to open their own inner-Sydney CBD restaurant, Bridge Room, they called upon Tobias Partners to create an environment that provided an agreeable dining environment for clients and also a material incarnation of their signature style. We interpreted that, as food critic Terry Durack did, as: “instinctively modern, with a trace of new Nordic naturalism, a little ’90s classicism and a touch of farm-to-table”. But we also layered in a slightly Japanese sense of Zen to reflect the purity of ingredients and precision of preparation characteristic of Ross’s cuisine. The result, in this classified 1930s corner building close to Circular Quay, is a relaxed, stylish dining experience. Effectively, the Bridge Room is a nuanced mix of influences brought together into a seamless whole.
